Potato salad with NEA Mustard Sauce

This potato salad can be a main dish or accompany grilled meats.
Ingredients
4-5 large diced potatoes
2 tablespoons white vinegar
1/2 cup diced celery
1/2 bunch chopped parsley
1 red onion, finely chopped
2 boiled eggs
1/2 cup boiled corn
salt, freshly ground pepper
1/2 cup NEA Mustard Sauce
Method of preparation
Peel and slice the potatoes and start cooking in cold, salted water. Let them boil. When the fork is easily inserted into the potato, drain and add the vinegar. In a bowl, carefully mix the potatoes, celery, onion, parsley, corn and chopped eggs. Add NEA Mustard Sauce, salt and pepper if needed, and mix gently.
